Gastronomy in Chile

The Chilean cuisine is based from the blend of traditional native cuisines made by the people who live in the regions of the country. European colonization also gives them the different styles in cooking. Germans and Italians also influence the cuisine of the country.

Common appetizers in the country are Alcachofas Primavera, Aspic de tomates, Ceviche de corvina con camarones, Ceviche de merluza, Coctel de camarones, Enrollados de jamón, Jamón primavera, Mousse de ave, Palta reina, Salpicón, Tomates rellenos con atún and Tortilla de porotos verdes. Common soups are Ajiaco, Albóndigas de cordero, Caldo de gallo, Carbonada, Cazuela de pava con chuchoca, Consome de ave, Crema de verduras, Crema de espárragos, Crema de garbanzos and Sopa de garbanzos.

Typical salads and vegetables found in the country are Coliflor al gratín, Ensalada chilena, Ensalada de papas picantes, Ensalada de pepinos, Ensalada de pimientos, Flancitos de coliflor con salsa, Flan de espinacas o acelga, Fritos de porotos verdes, Panqueques verdes, Pastel de acelgas, Torta de cebolla gratinada and Zapallitos con pimentón.

Favorite prepared dishes in Chile are pork dishes (Arrollado de chancho, Chancho adobado, Estofado de chancho, Longaniza, Malaya a la chilena and Rollo de cerdo pic; Lamp dishes are Caritún, Chuletas asadas, Cordero al horno, Cordero Guisado, Cordero en salsa and Patitas con ají); fish dishes (Chupín de Congrio, Jurel en salsa de tomate y pimentones, Lenguado a la plancha, Pejerrey relleno, Pescado a la teja, Pescado Rebozado and Tollo en salsa de erizos); and seafood dishes (Chupe de mariscos, Consomé de locos, Mariscal, Mariscal caliente and Pastel de jaibas).

Famous desserts in Chile are Brazo de Reina, Chumbeque, Empanadas de manzana, Kuchen, Mazamorra de manzana, Merquén, Murta con membrillo, and Tortilla de rescoldo.

Some alcoholic beverages in the country are Caliente de chicha, Chicha de calafate, Chicha de manzana, Licor de oro, Muday and Murtado. Coffee, tea, herbal tea, soft drinks, fruity milk shakes and juices are typical drinks in the country.
